It all began in 2018 with a simple yet ambitious idea: to create a lactose-free alternative to traditional protein products. The challenge: turning egg white into the base of a new product — good, natural, and yogurt-like. Yo as in yogurt, egg as in the egg from which the white comes. The first tests were done at home, then in small adapted facilities, until reaching the current production site in Villareggia. The production process still preserves an artisanal spirit: every day requires attention, adjustments, and care. The same care goes into the selection of suppliers: only 100% Italian eggs, fully traceable and strictly controlled, to ensure quality, safety, and transparency.
